Summer gardens are great for a laundry lists of reasons: the freshest herbs, absurdly sized vegetables, non-stop growth, and low maintenance responsibility. Back to the whole non-stop growth thing, what are you supposed to do with your produce after you’ve exhausted every avenue to use it up? Grab a fork and try one or all of these recipes.
Charred Broccolini Caesar Salad
Broccolini is one of the most versatile veggies. So much so you can make a caesar salad with it. This is the perfect dish to act as a side, an appetizer, a main course, or just to elevate broccolini so it feels new, fun, and different. Not to mention, it only takes 20 min from start to finish.
Recommendations:
Keep broccolini in oven for 25 minutes if you prefer a more charred veg
Use Violife vegan block of parmesan if you are replicating as a non-dairy recipe - this cheese shreds so easily and mimics a consistency of a regular cheese
Sourdough pieces will harden slightly after removed from air fryer - keep this in mind when cooking until desired crispiness.
Leave off dill or substitute a different preferred herb (i did warn you’d be seeing a lot of dill though)
